Dear friends and colleagues,
it is our pleasure to present the Proceedings of the XV European Symposium
on the Quality of Eggs and Egg Products and the XXI European Symposium on the Quality
of Poultry Meat, taking place in Bergamo from 15 to 19 September 2013.
The joint Symposia, promoted by the Working Groups 4 and 5 of the European Federation of WPSA, are organized by the Italian branch of WPSA in collaboration with the University of Milan. After Bologna 1999, this is the second time that these Symposia are held in Italy.
The Scientific Programme of the Symposia intends to provide in eight separate sessions an overview on the current state of research in the fields of the major quality aspects of poultry meat, eggs and their products. Thanks to the contributions of outstanding invited speakers, three plenary sessions are organized focusing on the trends in poultry product consumption, the current microbiological issues, and the sustainability of poultry production systems. Participants to the Symposia have the opportunity to enjoy a large collection of attractive posters and to establish collaborations with poultry scientists from Europe and outside.
This USB Flash drive includes the summaries of about 170 scientific papers and more than 130 full papers presented by delegates coming from 45 different countries of the World.
Our special thanks to all the members of the scientific committee and their chairman Dr. Massimiliano Petracci for the valuable work of contribution reviewing and for laying out the scientific programme.
